Found this recipe awhile back after watching Rachel on 30 minute meals. It looked so delicious and it is! It doesn't really look like that picture, it is more like a minestrone soup...so easy to make, great flavors and healthy full of great vegetables. That means the kids aren't too keen on it but Steve and I love it! We leave out the crushed red pepper flakes makes it too hot for our tastes.
Also this blog is so cool. I love her oreo pops idea. We are going to make those for our neighbor gifts this year. Tried a few of her recipes....the cherry chicken lettuce wraps which were SO GOOD...I did not make the coconut rice (couldn't find coconut milk?) and I replaced the cherries with craisins. When serving them, I added a bit more Yosida's original gourmet teriyaki sauce (that is the best stuff!) for a little more flavor YUMMY! Also made her Westwood Salad. Pretty high in fat, but I think I found a new favorite! Definite keeper!
